Lemon Self-Saucing Pudding

A comforting home pudding with a wonderful zesty lemon flavour. You can put this dessert together quickly and easily with everyday ingredients from your pantry. Enjoy with think a scoop of ice cream.


  • 1 cup plain flour
  • 1 tsp baking powder
  • pinch salt
  • 3/4 cup caster sugar
  • 1 egg
  • 2 tbsp butter
  • 1/2 cup milk
  • 1 cup boiling water
  • 1 tsp lemon zest
  • juice of one lemon


  1. Preheat oven to 180°C.
  2. Using a little butter, grease a large soufflé dish.
  3. Sift flour, salt and baking powder together.
  4. Add 1/2 cup of sugar, egg, milk and lemon zest mixing well.
  5. Carefully stir in melted butter.
  6. Pour into soufflé dish.
  7. In a small bowl combine 1/4 sugar with lemon juice and bowling water.
  8. Carefully spoon water, sugar and lemon juice mixture over the batter.
  9. Bake for 30 to 40 minutes or until pudding top bounces back when lightly touched.
  10. Allow to stand for 5 to 10 minutes (so sauce thickens) before serving.
  11. Serve with cream or ice cream.
